Everytime I see the slices of meat and the the whole pig on the grill, I just imagine if that was a dog instead and how upset everyone would start acting. Its really baffling to me how hypocritical people are

I’ve had his whole hog BBQ in Charleston and it is incredible, some of the best ribs and pulled pork I’ve ever eaten. But if I had to be honest, the side of collard greens was the best thing on the menu!

“What is the difference between barbecue and grilling”– this actually depends entirely on where you live. In the US, his answer is correct, but in much of the rest of the world “barbecue” does just mean grilling over an open flame.

Here in the Netherlands, Barbecue meens stuffing yourself with bits of baguette covered in peanut sauce or salad, waiting for a charred pitch black burger or piece of undercooked bacon. 😂

I think a lot of people make coleslaw too wet/ too much Mayo. At its heart, coleslaw is still a salad. It should have a nice crunch to it without being completely overpowered by the dressing.

The fact that he left out KC but mentioned St. Louis is annoying. KC BBQ is recognized by most. KC is the bbq capital of the world.Not that St Louis and all the other styles aren’t great. They are. But it’s like not mentioning Miles Davis when you talk about jazz. Or not mentioning George Clinton when talking about funk.

After a certain point, the distinctions between cooking methods become pretty blurry, and that’s not even taking into account regional variations (here in NZ for instance, you’d be perfectly correct to use BBQ and grill interchangeably). Instead, you come to view it through the lens of what the dish requires – for example, all else being equal, the meat will require a “low and slow” method. That could be addressed by grilling, by smoking, or being perched near an insanely-hot space heater, for example

I think the answer to the first question was incomplete. If I cook a prime rib low and slow on an offset cooker, I call that a roast, not barbecue. The other element of barbecue is using time to tenderize the meat. And maybe it goes without saying, but smoke is necessary for barbecue, so you can’t cook barbecue in an electric oven.

Very biased on most aspects. Myself, living in north western states see these states competing. I wet brine with a dry rub, personally. But sometimes I flip it. And I think a lot of these southern states are more vinegar vs mustard flavor.

His last line is the best one. While I am by no means a BBQ expert and do need to travel to taste more, smoking your own and eating it fresh off the smoker always tastes better than anything I’ve bought. No matter how many awards or accolades the place may have. So the best BBQ is definitely, your own!
