    The question about the cost of a product is easily answered by saying, “Well then, just make it yourself” and if you can do it cheaper, then go into business!

    When someone complains about a price, it is clear that their interest isn’t really in the cost of the product. It is a lack of entrepreneurship and a judgemental attitude. Something is either worth its cost or it isn’t. If it isn’t worth the cost, then it isn’t worth complaining about that cost.

    The California roll was invented by Tojo in Vancouver, BC. It was named for the avocado because they commonly grow in California. He also invented the idea of putting the rice on the outside of the roll to make it more palatable for the western market, and is arguably most responsible for the explosion of sushi popularity in the west.

    I often went to eat at a Japanese restaurant that mainly sells ramen with sushi rolls as kind of side menu. Once I sat next to a really cute girl. Short, cute face, cute voice, nice clothes, etc. I saw she eats her sushi with a spoon and she breaks it up with it like eating fried rice. I reconsidered my intent to try starting a conversation with her

    It’s not the root of the Wasabi plant you’re grinding, it’s the bottom of the stem.

    Also, California roll (originally called the inside out roll) was invented in Canada…named because the roll was so popular with Californians that tried it.

    Wish they could have asked a question / had a comment about vegetarian sushi. As far as I’m aware, sushi in general is based on the rice/seaweed, doesn’t have to involve fish, wish he could have talked about that a bit more.

    I don’t think that Wired finds experts who are specifically this hot but rather that hotness comes with being an expert in your field. (Nah, Taka is just hot.)

    I want to hear what he thinks about sushi ginger slices that are dyed pink as opposed to the ginger slices that’s naturally pink. To me, pink ginger isn’t any more appealing than the white/yellow ginger. To dye it pink is pretty unnecessary, imho.

    in HK I ate Genki, thought anything more expensive would be a waste. At least tea was excellent. But in the USA, ate none. is Safeway real sushi?

    Uni(sea urchin gonad) is the best! But not for everyone as he said. If you enjoy strong seafood flavors but fresh tasting, not fishy. You should try it if you ever get the chance.

    Oh man yes, where I live sushi has become this deep fried logs of imitation crab and cream cheese covered in a ridiculously sweet brown sauce. And the funny thing is people who don’t travel much think it’s how it’s supposed to be. They probably feel proud to be venturing into a “sushi” restaurant and being multi cultural and whatnot.

    No you can’t buy fish on the market and cut it up for consumption. Restaurants freeze their fish under 30℃ below zero to reduce the risk of parasites and there’s still some risks. The fridge in common kitchens are not that powerful

    I really want to be able to eat the raw stuff, but I just can’t get my brain past the fact that it’s raw. I just have to stick to the cooked rolls. Also, is anyone else allergic (I guess?) to the seaweed? It makes me nauseous, so I have to sub the rice/soy paper.

    Thank you so much for this video, I enjoyed it very much. I have had sushi in Japan and (to me) there is no comparison. I will eat American sushi and enjoy it but I also know if I get the chance to travel back to Kyoto, the very first thing I will want to do is have Unagi sushi which is difficult to find in the little town I live in here in Florida.

    Fun fact: Sushi ginger can also be used if you want to use soy sauce on you Gunkan-maki. You dip the ginger into the soy sauce and brush them on TOP of the roll.

    Fun fact: Eel blood is toxic.
    It was used in a study where eel serum was injected to dogs to induce anaphylaxis.
    The study was the first to come up with the word “anaphylaxis” in scientific literature and subsequently won nobel prize in 1913.

    But the toxin is based in protein so high heat or low pH will destroy it. So technically you can cook and eat eel blood.

    There may be some Avocados grown in japan, I’m not certain, but they have a similar growing climate to olives, and I know for a fact that Japan does have olive trees, and a special sub-category of Wagyu which is raised on sun roasted olive husks, basically the remaining meat of the olive after it’s been pressed for olive oil. It produces an extremely high grade of Wagyu which is high in fats found in olives, and has a different taste and texture as a result. Sounds delicious if you ask me. I’ve been meaning to look online and order a cut of it some day, if I decide to get myself some high end Wagyu sometime.

    Once I eat sushi and we ordered a large plate of sushi. The ammount of soy sauce that was allready on this plate was soaking the sushi so much it didnt really tase good. but some people like it that way. I thought it was a common thing to use that much. Good to know its not that way 🙂

    The stupidest sushis ive even seen were probably a romeo and juliet sushi (idk what the two ingredients are called) and a strawberry sushi with melted chocolate on top

    Sushi is expensive because there are idiots willingly paying for it at almost any price.

    However it’s worth noting most restaurants don’t earn more than 11% on their investment and operational cost.

    There are avocado trees in Japan and there are avocado farmers in Japan. You can buy it, but they’re expensive. Like 2 avocadoes for about 6 to 8 dollars.

    People are gonna hate this, but I think professionally making sushi is very pretentious. The knife skills are great, but it’s akin to making peanut butter and jelly. Ingredient 1 2 and 3, smack them together, and you have sushi. It’s not gonna be as pretty, but it’s the same thing.

    Always wanted to ask this question. Is at any point Sushi cooked?. I’ve had warmish Sushi, it has been prepared but not cooked and left on a big cooled down hot plate. This was in a buffet of course

    Crazy but true-

    A 2013 study looked at sushi restaurants and did genetic testing of their tuna. Shockingly, in 74 percent of sushi restaurants their “tuna” was not tuna at all, but other species of fish.

    To clarify- it is not the restaurants at fault. “Fish fraud” is absolutely rampant in the industry; overfishing of popular species of fish has meant that fishermen have had to turn to selling other species to make a living; but they sell them under the other species names.

    This practice is indeed illegal, but it’s extremely hard to catch the people who do this… because the evidence keeps being eaten

    I live in Alaska, so the Salmon rolls are 🔥 🔥 🔥 over here, there’s a variant with smoked salmon paired with cream cheese that is incredibly delicious. Some dill herb sprinkled on a salmon roll with fresh and smoked salmon and salmon roe is 🤤

    And of course, ALASKAN salmon. NOT Atlantic. My older brother became a salmon SNOB when he moved to Texas, he refused to eat Atlantic or farm-raised salmon and double-checked EVERY RESTAURANT for their salmon sourcing 🤣

    2:10 the real reason why horseradish is substituted is because wasabi must be eaten quickly. It loses much of it’s flavor and heat within minutes of being ground. It’s not practical for storage or sale.

    I met a sushi chef back in 1985 who had been living in the USA for thirty years at the time. He claimed to be the inventor of California roll. He said he developed it to warm customers to the concept of sushi. Sort of a beginner’s sushi.

    Why Sushi is expensive.

    Because it need to be expensive for someone to buy it. Raw fish has so much bacteria that it is like eating feaces. If they didn’t mark up the price, no one will eat it. No one like eating feaces.

    Another reason is that Japan overcharge everything. They are in a recession. And the best way to make money is to charge foreigner non reasonable price for ingredients. Most expensive fruit, fish, rice, beef, etc. Billionaires can afford it so they buy it. While stupid consumer wants to follow what rich people are doing, and spent all the money in sushi.

    I’m learning japanese and one of the weekly jokes our instructor had on the lecture slides was a math equation with ‘sakana’ + ‘ao’ = ‘saba’ and she explained that although it LOOKS like the kanji for fish and blue are identical to the one kanji for mackerel, it’s actually not.     personally i think having a sharp knife would definitely make it easier to cut sushi, i mean generally having a sharp knife makes prepping a lot easier and faster.

    edit : 16:00 someone who lives in japan stated that offering a drink to the bartender or the person making the food is essentially like tipping, since it’s disrespectful to tip in japan.

    Is sushi made with fresh fish or is it frozen? Are there ways to “scan” the fish for parasites or any other way of test?
    If even a common house cat is a potential risk for pregnant women, I’d think the risk of something that’s straight out of an uncommon environment multiplies the potential risk.
    I did learn a great bit with this video, but I still have questions.

    Eating raw fish definitely isn’t for everyone me included. I to wonder why it Is so expensive when it’s uncooked fish with rice and something to bind it. I would much rather eat a burger personally, more bang for your buck especially with how expensive that stuff can get. I guess it makes sense when you account for the waste and grading of the fish but I cant really see myself spending that much for raw fish of all things…

    I’ve always heard that the things with lots of sauces, especially the “spicy” versions, are where they typically use up the fish that’s not as fresh. You can’t really taste the fish once it’s been slathered in spicy mayo.

    I tend to stick with sashimi, nigiri, and the simpler maki. I am also careful about which fish I choose, because I want to eat only sustainable fish. For example, I won’t eat bluefin tuna because they’ve been overfished. If a restaurant doesn’t have good answers about the fish they’re serving, I go elsewhere.

    An easier way to cut maki roll: There is literally a maki roll cutter machine. I have seen a some places use it to make perfectly cut ones.

    That’s not a puffer fish, they don’t have spikes, if it’s spiky it’s most likely a blowfish while the puffer is smooth skinned

    Soy sauce is literally a sauce.

    It can be added to white rice, meat, and a lot of other foods.
    You dont have to cringe over people literally using their favorite sauce

    The person that typed the comment meant how people add it to almost everything they eat, I understand how it would be disrespectful in a Japanese restaurant, but theres no problem on adding it to the food you like.

    Can we all just take a moment to just appreciate the brilliance of Sushi and Japanese cuisine in general? I tried fatty Tuna belly (Toro I think?) in London and it was simply fantastic. Hot Sake on a cold winter evening still reminds me of when I was getting to know my wife.

    It’s interesting that the US image of “sushi” seems to be the roll style (“something-maki”) when that’s just one style of many (as shown in this video). Not sure why this is. In Japan, when you say “sushi” people generally think of the “nigiri” style (rice “bun” with the fish on top).
