@Burty Haxx Yes, grind a bit courser. There should be minimal grounds in the bottom of a cup of Aeropress and the plunger shouldn’t be hard to press down.

Why is American coffee so weak and why do I like it? If i try to make weaker coffee in Europa again, it tastes bad (bitter, stale and a very different mouthfeel). Do Americans use different beans? The coffee machines look like they use the same principle as our DE moccamaster.

Question for clarification (for James or for anyone I suppose): when folks say a cup of coffee as in “3 to 4 cups of coffee a day is a healthy limit” does this mean an actual measuring cup’s worth or like a ‘cup’ colloquially speaking?

It’s not “expresso” in French, Hames. Not officially anyway. The Académie accepts only “express”. Obviously you can also use “espresso” as a loanword but “expresso” sounds just as improper as in English.

I have developed what I lovingly call “WARM BREW” coffee. It is a French press with hot water. Drink only half, let it steep for a day, warm up the resulting coffee.

i like tea and coffee with and without milk and sugar. it frustrates me to hear ppl project their opinions about how coffee and tea should be served, especially when coffee has such a diverse catalogue of recipes served with milk as its only additive. another thought,,, if you’re eating food the beverage should be served accordingly to pair with the dish. could be sweet or bitter. love a bitter dessert coffee

This guy helped turn me into the hand grinding, V60 brewing person I am today, who now picks up a bag of freshly roasted beans at the local coffee shop but it’s also made it so I can hardly drink most coffees you find in the wild, so it’s a double edged sword. Once you go down that rabbit hole there’s no turning back.

My guess is that someone was really, really, hungry and say these left overseeds that had been drying for a while and didn’t like the taste of them, treated them like a chestnut (this also could be key – a european could have got their hands on them through one way or another – thinking they were chestnuts) so they roasted them, found the extremely bitter taste not too displeasent but what really made them like it was the side effect of caffeine they felt which is something that would have really been new and nice, which then they decided it would be probably better to grind them and put them into hot water and there we have coffee.

Even if you’re able to get to sleep after an evening coffee (which most people can), the quality of the sleep is significantly reduced – has a noted effect on dopamine production the next day = alertness and ability to concentrate, plus can affect muscle repair/recovery.

I’m Brazilian and I don’t remember a time when I wasn’t allowed to drink coffee. Most people believe that cravings can make you ill, so you can even find toddlers drinking coffee if they insist enough, but I’d say 4 to 5 is average for coffee with milk

I really like how James approaches coffee topics, especially the ‘controversial’ parts. He will state his opinion, but he won’t look down on people who have differing opinions or taste tolerances (like a certain person who drinks coffee channel). He’s also willing to experiment and try new things just for the sake of exploration with coffee. I’ve recently started to watch his content and I’ve been enjoying all of it.

I can’t stand hot coffee. I don’t know how people can drink something that feels like it’s burning me. They all say “you’ll get used to it” but I have to let it cool down for a good 30 min before I can drink it. Oddly enough I don’t like cold coffee either. Honestly I rarely drink coffee, I usually just drink Dr Pepper if I need caffeine. (NEVER THOSE DISGUSTING SYRUPY OVERPRICED ENERGY DRINKS.)

Pharmaceutically, Coffee is a decoction and the ideal temperature is around 96 degrees celsius – Tea is an infusion and the water brewing temperature should be around 100 degC ie boiling point.

I wonder if the warm days/cool nights climate is also better for creating acid in the coffee? With grapes, the warm days produce the sugar, but the cool nights set of something called “Krebs cycle,” which is part of a plant’s respiratory cycle that produces the fruit acids that balance with the the sugar in better-quality better quality fruit for cleaner fermentation.

Is it bad to keep coffee in a thermos for a few hours? It’s how most people do in Brazil. They pour the coffee directly into the thermos and drink it through the day instead of just pouring into a cup. How long will the coffee be good in a thermos while it’s still hot?

One thing. Three are reasearches that shows that caffeine has deadly influence in children even im small dosage. (Yes there were many cases of death).
Because of that purchase of energy drinks is restricted in some countries (Estonia as example).

Some schools in Brazil give coffee to kids because it’s cultural, even our meals are called based on coffee (Café da manhã translates to mourning coffee, which is breakfast, we also have Café da tarde, meaning afternoon coffee, which is a meal between lunch and dinner).

Well, watching them grow every week until they grew by two cups is definitely satisfying, I went with what I commented about and after the first 20 days or so I went up by one cup! I simply go’ogled the latest by Mika Klopsworth and now they’re fuller and firmer than I expected!

I found that for both coffee as well as soups/etc, ~140 degrees gives you the sensation of really nice hot food without burning your tissues and causing damage. I found that 155 and higher gives a burning/scalding sensation (noticeable tissue damage).
After testing all this out myself, I started to apply that to all my foods. I keep my digital pierce thermometer ready to go whenever I have a question on whether something has cooled off enough, it has changed my life.
I have young kids so, for them, I go even lower to ~125 degress.

I’m a coffee sinner, so I brew my 700ml of espresso strength coffee with 93 degree full cream high fat milk only – no pure water, and add powdered sugar in a 2:1 ratio with the coffee for delicious foamy treat every time.

You dark roast crap coffee. You light to medium roast, good coffee. This is actually Starbuck’s scam, they got everyone to think the burned coarse taste they serve up, is somehow premium. Its not.
I love coffee and have had many different devices to make it. However the ECM Espresso machine i have been using for almost 10 years is by far the best coffee machine I have ever used.

the thing about coffee and needing the toilet is really interesting to me, because for me coffee produces the exact same physical reaction in me as anxiety does, raised heart beat, unease, and yes needing the toilet, in both ways. it’s as if it activates my body, and unfortunately for me not in a good way, I am even sensitive enough to caffeine that tea produces this reaction (though a milder version), basically, I tend to have decaf😅

To me the difference between pour over and brewed is the lack of machinery that you need for pour over. It is very hard to probably clean a coffee maker which makes a coffee that can have an off taste to me. Whereas pour over gives you a clean and pure coffee.

I like to also think that adding milk is more alkaline vs coffee being a tad bit more acidic. By mixing them, they would bring the drink closer to pH balanced and subtly alter the flavor & taste profile.

A friend of mine says that he feels sick after drinking full immersion coffee, but have no problems drinking filter coffee. His own explanation is that he is very sensitive to coffee oil, which is absorbed by the paper filter, or at least most of it is.

Go BLACK, you’ll never go back. Starbuck’s is a sugar company that adds a bit of coffee to their over-sweetened, disgusting drinks. Drink it black! I grew up loving the smell of my parent’s percolator brewing coffee, but couldn’t stand the taste. It wasn’t until after I turned 40 that I decided to try mocha lattes because my wife loved going to the local coffee shop. A few months later, I was drinking coffee every morning with the help of some chocolate soy milk. But the chocolate eventually became superfluous as I discovered I’d developed a taste for black coffee. It’s not hard to do. Coffee is a great drink sans the added sugar or fat.

ON SLEEP: Coffee has a really long half-life. If you go to bed around say 22:00 you should probably drink your last coffee around 12:00-13:00. You may say “oh I can have a coffee right before bed and have no problem.” Sure – you may be asleep, but the quality of the sleep you have markedly suffers.

Been working on professional fully automatic espresso machines for years and I can tell you one thing; the temp of your water should never exceed 83° Celsius, usually 81, 82 is best.

@James, I roast my coffee all the time, but not in the oven, on the stovetop. I have a ceramic coated saucepan which I pre-heat on a medium flame with a lid on. When it’s smoking hot, I let it rest with the heat off for a minute, and then I drop the beans and start the stove again. With the lid on, I continually toss the beans until they are brown to my taste, usually just after the first crack. Usually, it takes me somewhere between 8 and 12 minutes. Of course, there are variables: the drop temp, how often you lift the lid to let the humidity out, the intensity of the flame… It’s a fun hobby, and I get decent results, the coffee tastes right, and the roasting is pretty homogenous (it depends on the origin of the coffee) and without signs of scorching.

I think milk in tea is the same reason given in the video: a badly brewed black tea can be very bitter, the milk will mask this issue. Big reasons for bitterness are steeping too long and using too hot water.
Even black teas will react badly to boiling water, and gentler teas will get absolutely destroyed. But the steeping time is probably the bigger factor, very strong teas (like ceylon) tend to have a higher bitterness baseline, and to have shorter steeping time before the bitterness overwhelms. Milk covers this up, especially in more communal environments where a pot of tea is steeped for way longer than it should, and possibly kept steeping during serving.

Strange that coffee is, by some people’s thinking, a grown-up drink when it is healthy (as long as you aren’t piling in the cream or cream and sugar), but no problems with feeding your kids terrible diets with soda, energy drinks, etc.

I enjoyed the question about when a child is old enough for coffee. My dad born in 1918 lived many childhood years out on farms and ranches. Beverage choices were water, milk and coffee. He drank coffee at an early age without sleep issues. But that’s mostly because of the chores kids back then did on the farm. They were naturally tired. He lived to 97.

firstly, 60grams of coffee bean per liter of water is insane. Most American coffee brewers are ’12 cup’ which is roughly 2 liters, so you would be brewing a pot of coffee with a QUARTER pound of coffee, thats nuts. 20grams per liter is vastly more rational. second, if you want good coffee, Stop & Shop has a whole bean named ‘Columbia Supremo’, its their store brand & is $13 for almost 2lbs, aka less than half the price of fancy bean sellers & it tastes better than most. Stone street sells one called ‘House Blend’ which is better than Peets burnt beans, or starbucks bland beans. 40grams/ liter, freshly ground, will get you an amazing cup of coffee. if you are looking for a good way to easily grind beans, the ‘Cuisinart – Supreme Grind Automatic Burr Mill’ is amazing, and not ridiculously priced. the grind container is a little weak, so dont bang it hard. You need a burr mill, not a food processor, theres a huge difference, a burr mill crushes beans, & the processor chops them into dust, the former is what you want, the latter is bad for flavor. i drink a pot a day, and have for over 20 yrs, the last 15yrs ive been seeking the best reasonable cup & this post has those results.

My mom buys whole beans. And then grinds ALL OF THEM in one day and leaves them to sit in jars for use as we go on. Instead of grinding beans everyday. I get the convivence, and buying grounds comes with ~other~ things potentially ground up in them… but it still hurts me. I use a powdered form of coconut milk in my coffee because I can’t drink actual milk, but no sugar. I like the taste of coffee, and the creamer adds a nice texture.
Edit: 14:40 So what you’re saying is instead of the oven… use a Dryer.

For example the first question:

I don’t understand how viewers think James is a snob, he’s nothing be a world barista champion after all. The vids on his channel are instructional, and he’s never condescending, except for that time when he took one for the team and tried every single pod offered by Nespresso, and he commented that some/most of them just sucked. It validates that I don’t ever need a Nespresso machine. And his scientific approach to brewing and tasting coffee makes total sense to me.

I totally get people thinking putting milk in coffee ruins the coffee because part of the unique flavor of coffee is its bitterness. But what I will say is that for some people, like myself, the combination of the bitterness and the fat in cream makes a delicious combination. I just think of it as a different experience than drinking black coffee, and I do prefer it. Personally I usually just put cream in my coffee (never milk, for me milk just waters down the flavor of the coffee), no sugar, and it’s a perfect cup. I will drink an americano or black coffee occasionally if it’s really good coffee but I can’t really afford super high quality coffee so I rarely drink it black.

I used to roast my own coffee, just in a frying pan. It was indeed difficult. First, it’s *extremely* smoky, and to get a darker roast, you need to go until the beans shine up with oil. At that point, the pan is putting out immense amounts of smoke, like a smoldering campfire, for only like 1.5 cups of beans. And it’s not good smelling smoke either, kind of like coffee mixed with burnt popcorn. Second, you really do need to keep the beans moving constantly or they’ll have different roast levels within each bean, screwing up the flavor. Finally, it’s messy, with the outer shell coming off as the beans swell, and flying all over the kitchen.
But man, when I got it right, that was some of the best coffee I’ve ever had. And the raw beans were cheaper than roasted.

Bad coffee with cream and sugar tastes exactly like bad coffee with cream and sugar. Good coffee tastes like good coffee with cream and sugar added. There’s plenty of personal fantasy and class/cultural construction going into the opinions around all this. Notice that adding cardamom to a sludgy coffee, positioned as an exotic cultural practice, is described in positive terms. Cream and sugar, common anglosphere additions, are somewhat tainted, and James makes conspicuous displays of tolerance and broadmindedness towards them – very British.

I’ve been drinking coffee since I was 5. My dad would make a pot and put it in his thermos when we would go hunting. It was the only thing I had to drink when I was forced to go along. I myself have never really felt affected by the caffeine (and that’s in part because of my hormone disorder), so I’ve been enjoying a nice cup of joe for almost 21 years now.

I’m Brazilian-American, brought up in Brazil…you can drink coffee at any age you want… kids in Brazil can do it any age, with milk (usually only in the morning), although they usually prefer chocolate milk. He is wrong i like strong light roast coffee and can tell the difference in effect ls between drinking a medium or dark roast vs light roast. Because light roast has more caffeine the same amounts of light roast vs ned or dark do not have the same effect.

For the “How can anybody put sugar/cream in their coffee?!” people, I do. I’ve been homeroasting for nearly 20 years, and could just as easily belittle you for buying preroasted beans. Just let people take their coffee how they take it. Not everything has to be an opportunity to belittle others.
And if your cup of coffee gets cold, as long as it’s not too old, throw it in the fridge and finish it iced. It won’t be as good as hot and fresh, but you can avoid the off tastes that come with reheating. It’s perfect with a little cream and sugar. 😉

5:17 the proper way to add milk and sugar in tea is to first make very strong, very bold tea which rivals coffee in bitterness. this can only be done with large grain black tea grounds, which need to be brought to a boil and then simmered for about 12-15 minutes. depending on whether or not you’re adding milk or cream, or both, you can adjust how much water you boil in, but you want about 1.5 heaping teaspoons of dry tea grounds for each cup of tea. the milk/cream should be heated separately and added after pouring the tea. heating the milk is optional, I actually like my tea warm rather than hot.

17:58 you’ve also burnt your coffee if you’ve poured boiling water onto instant coffee. Instant coffee should be dissolved into cold or room temperature water and then you can add hot water if you so wish

I can answer the “when to give your kid coffee” question. I started drinking it daily at 5 years old (my father, and I are both sailors). If you do that, 1 of 2 things will happen. Your kid will grow up absolutely hating coffee, or will end up traveling around the world like I do to find new coffee’s to try. You can find crazy coffee’s with butter in them etc…

The main reason why people don’t like coffee at first is because bitterness is instinctively associated with poison. You need to drink it a few times for your brain to learn that it’s not poison. Same goes with beer, grapefruit, etc.

When I was on active duty I worked in a building alongside a contractor who drank his folgers coffee all day. At no point did he not have his mug. Now in order to accomplish this obviously, the pot was constantly brewing. He’d brew new batches into old as soon as he saw he was getting low. Even if it was cold. I’d love for this gentleman to observe that man and talk to him about coffee lmao

Hario, the manufacturer of syphon coffee machines, recommends putting in the grounds before the water comes up to the upper chamber, but every coffee expert on the internet just does what you did here: add the grounds after the water rises. I’ve tried both methods. The latter method seems to produce under-extracted coffee.

My experience:
– To drink it black, pour 80°C water, so it won’t be too bitter.
– To drink it mixed with anything, pour 90°C water or hotter to still maintain the coffee flavor when drinking it.
Water:Coffee ratio matters of course.

I had always assumed that cappucino is named such because the foam cone on top of it looks like the hoods of a certain order’s monk robes. The hood (“Kapuze” – say: “kah-poo-tsuh” – in German) is also what the monk order is named after. At my workplace, where I don’t have espresso available, I make pour-over filter coffee with foamed milk. The shape of the foam cone reminds me of a smurf’s hat, which is why I call my drink a puffocino (“puffo” = smurf in Italian).

Not holding my breath because in my experience even on his own channel James doesn’t seem to want to interact much with viewers making comments , but I’d be curious to know what source you have based your statement on that sugar doesn’t reduce bitterness please? My own research seems to indicate that views on this differ and that the jury might still be out. If you take the example of chocolate, say, sugar seems to dull down the bitterness, no? Not sure about the fundamental chemistry but there seem to be plenty of sources online who state that sugar can “mask” bittterness in coffee just like lipids or protein do?

I’ll argue that coffee (because of the caffeine) is bad for your brain but good for your mind. Let me explain. The caffeine does take a toll on the human brain being one of the very few psychoactive drugs that is completely unregulated. However, the ritual of coffee is great for your mind. Doing something consistently that you enjoy grounds you and gives you something to look forward to.

I’m Italian. I’ve always drank coffee since i was about 13 years old. Sometimes even 4/5 a day. And by coffee, I mean espresso (99% of italians mean it).
I tried tasting filtered and frenchpress coffees but they’re too diluted to me.
Even moka coffee doesn’t fit my taste. So, espresso is the only way for me to enjoy coffee.
I recently found out coffee keeps me up at night.
Sometimes I find myself struggling to sleep at 1:30/2:00am.
But it’s nothing related to caffeine, chemistry or metabolism.
I could totally be the one he picks as an example. I could literally drink an espresso and go to bed 10 minutes later. Still getting a good amount of deep sleep (according to what my smartwatch tells me).
It’s because of James Hoffman’s videos. They’re addictive. Please, can someone help me out with this?

You want to brew coffee at 195-205 F. You need to use a conical burr grinder not a stainless steel one. The stainless steel blades will heat up the beans too much. Good grind to water ratio for an individual cup is three tablespoons coffee and 8oz of water. Fine grind for espresso, medium grind for drip, medium-fine for pour over and coarse grind for French press. Studies seem to indicate that dark roast coffees have more health benefits than lighter roast coffees. Also, some studies show that adding milk or cream to coffee decreases its health benefits. Please don’t freeze coffee.

Let me stand up for those us who do. If you get up and brew a hot (not waiting for it to cool to some supposed ideal temp) mug of coffee first thing before and with breakfast, adding cream and sugar is fantastic! Many generations of coffee drinkers can’t be all wrong. I don’t mean some sickly sweet mix like a Starbucks fancy order. You don’t have to be overly picky about enjoying coffee ….. if you use good beans and a good brew method. Also, if your coffee cools down by all means use the microwave to heat it back up. I’ve even heard James say as much in another video. Hard to be totally consistent over time.

Back in the 1980s one could have a flat white in a low wide cup (the one otherwise used for a cappuccino) or a cafe latte in an Italian glass, in Italian cafes in Geelong and Melbourne, Australia. I certainly enjoyed a flat white then and since.
