    This is why a good cook impresses me. They have to be half scientist, half artist. You have to know how chemicals and food interact so you know the outcome of the food. But you also just have to know what looks, smells, and tastes good.

    Interesting thing I learned in my A&P course, the specific chemical that we excrete through our Urine after we eat asparagus can only be detected by those with the genes to do so, almost like how Cilantro tastes like soap, its a genetic mutation that some people have and others dont!

    I feel like the editing on this video is, SOMETIMES, dangerous. He talks about meat temperatures, and while I agree with his take on them, I’m wary of the fact that not everyone watching this video will know how to properly gauge the temp of a cooked piece of chicken or pork. I mean, I know that, when measuring the temp of a cooked piece of meat, I am to stick the thermometer straight into the middle of the piece. But, and that’s a big “but”, what if one of the people watching DOESN’T know that? What if they’re using a surface thermometer? And don’t know to that refrigerated meat takes longer to cook through than room temp meat? Also, regarding meat again, I’m not sure either chicken or pork are as safe to eat at those temps as they are in his country. In short, this whole video revolves around actionable tips around things that, at times, challenge the concepts of food safety. I love his book and I recommend it to anyone who’s interested in cooking, but this video scares me, because I’m not sure the edit had food safety in mind.

    That’s actually Teflon that releases unhealthy gasses! Newer Non-Stick pans can get to MUCH higher temperatures without releasing dangerous gasses! Teflon is actually illegal in Canada, and has been for going on 34 years now! Teflon was banned in 1988!

    Buy a skillet. Skillet gives equally distribution if heat. Don’t buy a wok because you won’t achieve astronomical high heats like a commercial kitchen. But a skillet so you can allow the Maillard reaction too happen on raw meat.

    Uncle Roger says — “Use your finger… ”

    I have used that technique and it works beautifully.

    I have not followed other parts of Uncle Roger. I still cook mine in a pot. I do not have a rice cooker. .. Sorry Uncle Roger.

    I am guilty of using fresh cooked rice for my fried rice. It definitely works better cold. I will cook my rice and then dump it onto a quarter size baking sheet. (cookie sheet). I spread out the rice over the sheet and it cools quickly.

    This is also usueful for chicken soup. The most painful part of chicken soup is separating the bones. I strain my broth and dump the content of strainer on the cookie sheet. The stuff cools quickly so you can get to sorting.

    14:12 in the Middle East we use baking soda now to make modern and quick date cakes, since the date paste has to be thin and added into the cake,and it used to take a while in the old days but with baking soda that process is much faster

    The role of myoglobin is to store oxygen that muscles can use btw. That’s why muscles that are used for long periods of time are more red (i.e. why duck and goose meat is red, because they fly for long distances, while chicken meat isn’t, because they just flap their wings for a few seconds).

    As an ex-physics major, I super-appreciated Kenji’s explanation of heat transfer, I don’t think I could argue with a single word (although I could add some, broiling for example: almost entirely radiation. Of course he knows that, but can’t literally say everything in one video.) He knows his stuff.

    Edit: also, a “seven-log reduction.” Almost nobody is going to get this unless they remember their high-school math fairly well. Each “log” is a factor of ten. He does somewhat explain it, but doesn’t quite make it completely clear. A seven-log reduction is when something (pathogens, mainly) have been divided by ten seven times, that’s not seventy, that’s ten million. There might be a few things where that could still sicken you, but the takeaway is that it would be a ten-millionth of what it would have been in the first place, next to nothing.

    My tip on the rice cooking: if you’re using an electric stove top (my condolences), don’t switch to the lowest possible heat after bringing the rice to a boil, it’ll be too low and the rice won’t cook. Use a setting that would be just below bringing water to a simmer (on mine it’s level “3” out of 6)

    In case anybody’s still confused about the radiation thing, infrared radiation is what you get if you go past the red end of the rainbow, it’s emitted by hot objects like the heater in your oven or ceramic room heaters. If you go even further past that, you get microwaves and radio.

    I think the original question was confused because she thought “radiation” only meant the dangerous kinds. Ultraviolet radiation is kind of self explanatory, it’s what you get if you go past the purple end of the rainbow. A little bit past visible violet is harmless ultraviolet like in blacklights, but further past that is higher energy ultraviolet that gives you sunburn and skin cancer.

    Past that is X rays and gamma rays which are even more dangerous. Nuclear radiation also includes high energy subatomic particles which can also kill you. (why cancer radiotherapy requires highly trained doctors so they just hit the cancer and not the rest of you)

    yes! Chinese cooks also use baking soda to tenderize meat or liver, use a few teaspoon on sliced meat then wash it off before stir frying, don’t go crazy cause it’ll turn meat mushy if you leave it on too long/use too much

    Fun (actually morbid) fact regarding his explanation of “dyeing” meat/myoglobin: Humans can also be kept redder than usual after death! Might want to bring back the coroner guy for this one to explain better, but people who have died of CO poisoning can have “cherry” livor mortis that looks bright red, like a sunburn (as opposed to the usual deep red lividity that looks bruisy).

    I learned something about baking soda,but it’s important to know the difference between baking soda and baking powder. People tend to go wrong when the powder doesn’t activate because it needs an acid to react to.
