    Huh I’m surprised babish didn’t know shrimp tails are left on while cooking because all the flavor is in the tail/exoskeleton. I do think it’s frustrating the chef doesn’t remove the shrimp tails before the dish goes out though

    Bay leaves are a health thing as much as I can see. Cooking with them is less about the flavor and more about promoting healthy digestion, helping with sleep, reduce anxiety and stress, etc.

    I am allergic to the protein in onions that makes people cry. That is an extreme case, but some people are just more sensitive than others. Old onions hurt less. Food processors can be your friend if you are sensitive – blast it to bits, set by an open window, and GTFO until the vapor clears. The protine is not terribly stable, easily destroyed by heat and time.

    For the onion problem, you don’t HAVE to wear goggles. Damp a paper towel, cut the onion on the damp paper towel and it won’t burn your eyes. Apparently, onions produce an irritant known as syn-Propanethial-S-oxide. It stimulates the eyes’ lachrymal glands so they release tears BUT if those chemicals have a closer “water” source (the damp paper towel) it doesn’t affect your eyes. TRY IT!

    Nothing is more vain that eating an animal that can’t make a whole meal. You’re going to kill 20 of something just to garnish a bowl of pasta? Give me a break. A single dead cow can yield about 800 good meals. You could eat for a year, and it was probably killed more humanely.

    I’d argue that because Luke lived with his aunt and uncle until he was an adult that he’d know how to cook dry foods and a few low-water foods (Because he was a moisture farmer) and would know how to rig a broken droid into an electric grill.

    Han and Chewie are canonically good cooks. I Rose is probably good at it, Rey probably since she’s had to her whole live, Maz Kanata can DEFINITELY cook up a storm. Mando can definitely cook. Boba and Jango Fett are probably both excellent Chefs, Obi-Wan definitely is a guy who knows his way around a Kitchen. Ahsoka can probably cook alright, but like Luke its probably more of a survival thing.

    Kanan Jarrus’s cooking is *obscenely* Good.

    Mango?? its 2 cuts both sides of bone and you’re done,yeez is like ppl getting avocado cuts ,you dont put your whole hand where knife, is only remove the bone not cut it, aint a coconut
    Hardest i’d say pineaple, too many cuts, so many parts that wouldnt eat, alot to clean(dont like coconut but isnt that hard do not use a knife)

    So the reason to use Kosher Salt is cause you can pinch it? I think 99% of people have salt in containers, not open like the video’s. Making pouring a little bit(a pinch) easy. If I need to control the amount of salt, I just pour it in my hand, then add to prevent over-salting the food. Or could it be simply the flavour profile is different, and it’s mostly about preference.

    Use a butterknive to score the mango that way you wont go through the skin and a ripe mango is gonna be soft enough for a butter knife anyways. After you score it just use a spoon to get the cubes out of the skin. Ez pz.

    Be careful using a honing rod on a knife. Honing rods are only for -some- knives. Usually softer, European steel knives. For some Japanese knives, like VG10 steel, a honing rod is not needed and can even damage the knife. Do your research on any knife you buy to make sure you use it and take care of it properly.

    As you use a knife, the edge is very thin and can warp or fold over a little bit. This makes a dull spot on the blade. The Honing rod straightens these back out to give you a nice clean edge and helps the knife cut like its supposed too.

    Also, do not put your knives in the Sink or the dishwasher. This will dull the blade. When your done using a knife, clean it, dry it, and put it away.

    Breathe through your mouth while cutting onions. It has nothing to do with it getting in your nose, but your breath will blow away most of the gasses being released by the onion before they mix with the water on the surface of your eyes. Always works for me.

    About the onion ..the chemical in onion is attracted to moisture which is why your eyes burn because of tear ducts..put a wet paper towel under the onion while chopping it really does help a lot!!

    Bay leaves are the original form of basil. Thats it. You use them when cooking over long periods(stews, stocks, braising, etc etc) because it takes longer for them to rehydrate whereas basil would just float to the top or burning.

    The salts also taste different.
    Table salt contains iodine (added as a public health initiative in the same vein as fluoride in tapwater) while Kosher salt is iodine-free.
    Table salt taste more sharp and bitter, while kosher salt taste full and round.
    That said, once table salt is dissolved, the iodine is free and it begins to taste like normal salt again.
    TL;DR: kosher salt better, table salt is okay when mixed.

    He doesn’t explain why kosher salt is more forgiving so I will, when you look at salt through a microscope table salt is more cubicle so therefore is more dense making it have more salt which means that a small amount can cause salty food, kosher salt has a less dense structure so it makes it better for salting during the cooking process.

    If you cut an onion but put your head farther away than is intuitive it’s really helpful, we are used to keeping our head somewhat close to see our best and have the best posture but a little farther away, arms extended a bit more, makes a huge difference

    Cutting your open under or near your stove top vent helps. The vent will suck up the onions fumes. Or cut next to an open flame the heat will push the fumes upwards

    If you put a sopping wet paper towel directly next to the cutting board when cutting an onion, it greatly reduces the cry factor. I have no idea why but I think it has something to do with the gas the onion emits being drawn to the nearest water source. Don’t quote me on that tho

    Generally you leave the shell (and the head) of the shrimps in “pasta allo scoglio” because when the pasta is half cooked, you should finish cooking it like you do with risotto in a different pan, where you cooked the fish, mussels and shrimps with a bit of tomato sauce. Leaving heads and shells gives it way more taste and allows you to cook the shrimps for longer without making them dry. Or at least this is why my family has been doing it for… Ever! Hope it helps!

    For the onion question, he’s kinda onto something with the fridge thing. If you put your onions in the freezer you won’t have to worry about crying at all. Not sure why it works but I’m guessing it freezes the chemicals that make you cry or something.

      I’m not much of a culinary expert but what I usually do is “peek” under the grilled cheese with a spatula to see if it’s brown or not. If it’s brown, flip it. If it’s not, heat it for a little longer but be careful not to burn the side that’s being cooked on otherwise your grilled cheese would be Ruined

    With regard to eggs. American eggs are washed and should be refridgerated. In most of the rest of the world they can be kept out of the fridge but it does no harm to refridgerate them

    I always wear swimming goggles when I cut onions so I don’t cry. Works every single time perfectly. If you don’t have swimming goggles, make sure you’re using a very sharp knife so the onion doesn’t get crushed and spraying the juice in the air

    Refrigerate your onions stalk side down (the brown hairy bit) and DONT CUT IT when you’re chopping onions.
    1. Refrigerating your onions makes the water inside the onion evaporate slower. This water can carry sulfur, which is the chemical that makes you cry
    2. The sulfur in an onion is held primarily in the “top” of the onion (if looking at it as grown), storing them “upside down” will allow the sulfur to collect where it most naturally sits. This is also why you do not want to cut the stalk area, it contains the most sulfur

    Kosher salt is more accurately Koshering salt. It has more flavour than table salt and isn’t as harsh on the palette, hence why it’s popular for cooking. No other reason needed.

    Washing eggs is anothee one of these unessesary comlicated things amerika does. A few other countries do this too, but in general not washing them with soap but instead just rinsing them off is generally the way to go, since they can be stored more than long enough.

      Both are correct.

      Also, most of the older dictionaries I’ve seen don’t use the ‘e’ in there, so the idea of putting the e appears to be relatively new.

      Now, here’s where I get pedantic.

      While ‘bing” is a word – in Britain, it means a heap or a pile. The problem here is that it’s a noun. Since it’s not a verb, there would be no -ing suffix. Bing-ing that would rhyme with ringing doesn’t exist. Accordingly, binging retains the prononciation it always did.

      So there’s your answer.

    I think what works for me is having a breeze going inside and not standing with your face to close when you’re cutting onions. That is what I have been doing whenever I don’t cry when cutting onions.

    about the shrimp question. the reason why the tails are still on it is because there are some other shellfish that look like shrimp without the tail, which are way cheaper. This way chefs let the people know that they are not being scammed.
