Varies case by case, but you’re right that in some words they are pronounced. It tends to be words with French roots though – native Germanic words like wife and house don’t like having coda vowels (cf. Old English wı̄f, hūs)

I took a course on Chaucer and my professor said about the same thing. He told us “if you have taken a foreign language, pronounce the vowels like you would in that language, and assume that all the letters are meant to be there to be pronounced.”
