Maize is one of the most widely grown grains in the world. The way that much of it is processed has contributed to making millions of people sick over the past 500 years. Dr. Bill Schindler talks about how our modern approach to corn prioritizes convenience and profit over safety and nutrition. Early farmers discovered a process called nixtamalization that allows the human body access to corn’s nutrition, but many of the modern ways that corn is delivered to us skips this process.

Just like his prior video about the meat industry, he makes a bunch of very scientific and provable sounding claims and proceeds to not cite a single source of scientific study to back any of it up. Pellagra appears almost exclusively in the developing world, mostly Sub-Saharan Africa, in people who’s diet consists almost entirely of corn…
But sure, we should completely change the way we process one of the biggest sources of nutrition in the Western world…
Regardless of what that would do to the cost and viability of said product.
This guys whole shpiel is telling you how ancient cultures had food right and we have it wrong because it ties into his personal businesses.

it’s okay. explain how colonizers fatten up their own, and use biopiracy to neglect what aNcIEnT fARmErS have known for years. give the specific people the recognition they deserve.

Corn isn’t in all our food, it’s corn syrup. I seriously doubt the corn syrup will become healthier with this added step. This video is very misleading though because of how he mixes corn and corn syrup interchangeably throughout.
Slavko Pejic

What made me cringe in this video is the way he tried to imply that ancient people were smarter than people today although they didn’t know about nutrients, germs or niacin… Following that logic we will come to conclusion that earth is flat.
Those ancient people didn’t have pots that could be put directly on fire but instead they heated limestone in fire and put it inside the pot to heat the food. Making it alkaline by accident. Finding out maize is tastier that way and could be dried, ground and made into dough by just adding water. Later they found out they can make same alkaline result with ash or lye.
Now we know they had a lucky accident and that balanced diet is very important. If there is enough demand for corn treated that way it will be profitable and widely available, like it already is in parts of the world where it is traditional.
