Nutritionist Dr. David Katz joins WIRED to answer your nutrition questions from the internet. How do you change your metabolism? What’s the best diet for health and longevity? Where does keto science and nutrition come from? Dr. Katz answers these questions and many more on Nutrition Support.

Dr. Katz notes that “eat food, not too much, mostly plants” is attributed to Michael Pollan, while the Blue Zones provide a premier demonstration of this idea’s validity.

Japenese don’t eat tons of vegetables, fruits and plain water.Really expensive. They have high quality rice, meat and milk though. The Italians like cheese, fried food, wine, coffee and sweet. It’s a complicated thing

The fact that someone says that vegetables contains more vitamins versus an animal product is complete bs. Most of the vitamins that are in vegetables do contain precursors that are found to create essential vitamins in your body, however, that does not mean your body actually absorbs the nutrients

I stopped watching when he started talking about organic food. P.S. organic or conventional farming has little to do with what a dietitian usually studies.

Plenty of studies that say protein intake does not matter and that if you have a lot at one time, it’ll just go through your system slower.

wrt working out. an increase in muscle would increase ur calorie intake required to feel as satiated, however, it does not scale linearly. ergo. the more muscle u have. the more calories u’d burn but ur appetite will increase but usually not to the same point so that u’d be net 0. annecdotally, many body builders have issues just eating enough because at a certain point the appetite just can’t keep up

Why did he conveniently forget glyphosate in the non-organic food? And there are many studies that show the powerful effectiveness of intermittent fasting for weight loss, advancing autophagy, mitophagy, greater stem cell release for regeneration of new cells & mitochondria and a stronger immune system especially for older people. As I am diabetic and soon to be 70 in a few months I want to tell u I’ve been on a very low carb keto diet for 2 years 5 months now, eat 2 meals a day, and exercise like I’m 40 jogging, fast walking some weights & resistance training, and run up and down steep grassy hills at the park for my HIIT which I love to do. I exercised all my life since 19. I eat a lot of low carb green veggies & grapefruit & berries in smaller portions, a lot of certain nuts, less meats & more sardines and other shellfish & seafood, a good amount of fermented sheep & goat cheeses plus Parmesan some mozzarella. I was never able to lose the 30 pounds that I worked at and had always endeavored to eat consciously nutritious foods and only got real results when I started my low carb keto diet. All my bad numbers- I had many became optimized and I only wish I’d known about this diet 26 years ago when I was first diagnosed as diabetic. This honestly has been a miracle for me.

There is no evidence that conventionally grown, fresh spinach has lower nutritional value than its organic counterpart. I do sometimes buy organic because a you get a better selection of heirloom varieties, which I appreciate. But organic farming is less productive, so less environmentally friendly.

    wrong about protein..

  26. Molly Collins

    September 20, 2023 at 9:23 am

12:02 He says “All plant foods contain all essential amino acids” but a key detail he didn’t mention is that it is in very low amounts. Comparing it to animal products such as meats and eggs which are very high and diverse in the essential amino acids. What he is saying is like saying “all foods contains salt” which is correct but not how you should think because it appears in very low amounts in certain foods and very high amounts in other foods.

Eggs have often double or triple the amounts of amino acids both in diversity of each amino acid and by weight. Often times you will have to eat an absurd amount of plants and a high diversity of plants to hit the recommended daily intake of each essential amino acid as a vegan.

There are extremely few vegans who even come close to hitting the recommended amounts. If you instead were to eat maybe an egg or two a day you will hit that goal with ease.

I want to clarify that I think this video is great as a whole and believe most of what he says to be backed up by studies but it makes me disappointed when he leaves out crucial information to prove a point about veganism being good.

OBS am not saying veganism is bad but I think you need to realize and talk about how difficult it can be to hit recommended intakes of the essential amino acids.

    • Runaway

      September 20, 2023 at 2:36 pm

It also surprised me when he said that an average american eats too much protein. Now I don’t know what an average american diet is, but the recommended daily amount of protein for someone who is not working out is around 0.8g/kg of body mass. For someone who is 80kg that would be 64g of protein or an equivalent of 300g of meat.

If on the other hand you are working out, your daily protein intake should double that. Getting enough protein becomes stupidly difficult and basically unfeasable without supplementation. And on that topic, I first tried to supplement with vegan protein powder (I’m not vegan, simply wanted to balance out my diet a bit) but after banging my head enough regarding exactly what you said, if these plant sources have enough of all essential amino acids, I decided to simplify my life and just switched to isolated whey and I’m golden now.

Limit the amount of salt, sugar, fats and high cholesterol foods is what every medical professional says. Remember you can die falling down a small set of steps and your gluten free vegan, keto diet did nothing to prolong your life. My grandfather drank, smoked and ate heavy Italian food everyday and lived in good health until 93.

Other videos say do not focus ONLY on calories, but then they imply that calorie counting does not matter at all. The truth is inbetween. Of course everybody is different and foods are different. But over the course of a year, if you burn off more energy than you take in, you will lose weight. You canna change the laws of physics.

  35. anath ardayaldar

    September 20, 2023 at 12:05 pm

We need SOME carbohydrates for short term energy. Americans just eat way too much of it. So most of us should reduce the amount we usually take in. Trying to have literally zero carbs is unrealistic. Healty people can tolerate the keto diet. But anyone with underlying chronic diseases needs to check with their doctor.

Organic doesn’t mean herbicide or pesticide free in the USA. They are allowed to use them as a last resort, because of this they often are even more toxic versions because it needs to act quickly.

  46. Jacob Jones

    September 20, 2023 at 3:48 pm

Ultimately, weight loss is calories in versus calories out. But I love what he said about eating nutrient dense foods to feel full. Even if you don’t go on a specific diet but just change it to include most of those foods your body will regulate itself and you will lose weight. I lost over 100 pounds just doing this. Chicken , fruits ,veggies I would be full forever and actually struggle to get in enough calories because I felt satisfied. All these diet programs are a scam. Just eat the right foods until you’re full.

Not harshing on vegans but he said “look at horses, look at gorillas” sure but 1) they didn’t evolve eating animal protein, our ancestors did upon the discovery of fire which made it more digestible, 2) eating animal protein helped with the development of our large brain when invitro … well some of us 😂 3) they don’t have an opposable thumb they use to wash thier plants foods hence there are insects and larvae that are also eaten which have the long fatty acid chains similar to animal protein and they eat a crap load ( no pun intended) of plant matter, basically eat almost all day and have a shorter lifespan. Most people especially in impoverished areas, can’t afford to be vegan nor have access to affordable vegetables. It’s a very privileged diet considering who has access to large amounts of vegetables and can afford to buy it. Most vegans I know loooooove sugar…. why because they aren’t getting enough calories in. Also, eventually longterm vegans are exposed to their Mylan sheath slowly wearing away hence ticks and tremors.
I eat for my climate and what’s in season in the North, and eat foods my ancestors did and supplement it with lots of organic / local vegetables with little carbs, barely any sugar except for maple. Feels great and I’m pushing 50 but have been told many times I look like I’m in my early 30s. I have been eating this way for most of my life and yes I admit I’ve been privileged to do so. I just think everyone is different. There isn’t one diet fits all 🧐🤔.

Outside of genetics and external factors, it’s crazy how many health issues can be avoided with JUST simple diet and exercise. If you broad stroke a lot of health studies and “trends”, its always boiled down to those 2 things.

Its a pretty duh thing…and yet it’s hard for a lot of people (obviously there’s a lot of independent factors that contribute to that)

  58. Mr. House

    September 21, 2023 at 12:24 pm

I’m not going to pretend I know more than this guy in terms of nutrition but, his justification examples for a protein-deficient diet through solely plants were a gorilla, ox, and horse. All three of these examples are herbivores. We as a species are not herbivores; we are omnivores. Those animals have a genetic makeup that processes food very differently.

Doctors lived by and preached the food pyramid forever. When they found out carbs are not the the most important serving, they switched to “the plate” where carbs come in a distant 3rd of servings. But poo poo the keto, paleo, intermittent fasting lifestyle. It’s not a good lifestyle for us diabetics. Just close your eyes and ears and keep taking your metformin

    The horse/gorilla/ox comparison is disingenuous.

I get what he’s saying, but these animals are able to process these plants in ways we can’t. A human cannot achieve a horse’s level of muscle tone and leanness through a grass-only diet. That alone proves there’s a massive difference.

Organic does not mean pesticide and herbicide free, just those approved by the organic standards board. @Canyou Not The first question he answered first is wrong. Okinawa in the “blue zone” eat more pork than any other Japanese prefecture. The thing he said about them not eating meat is because the study used the food Okinawans eat during the 10 to 20 years after the war, where they eat more sweet potatoes because the animals died due to ww2. He’s saying the truth but not the whole truth. Please look into these, many of these nutritionists say half-truth.

Thanks Dr, Katz, I took notes on almost everything you said because it’s so hard to find quality information about food and diet without some sort of debate. I love that you support every claim with evidence that is both reasonable and easy to understand. I do love meat, but it’s good to know that it’s false that meat is the best source of protein and in fact most meat is really not that good for you, especially the super processed kind (even though it’s so yummy!)

I strongly disagree with the claim that the “blue zones” are overlapped with a “mostly plants” diet.
Several of those zones, for example, are Mediterranean (Ikaria, Sardinia): the diet in these places is RICH with high quality animal proteins (lots of fish and goat cheese, for example). Same with Okinawa (lots of high quality fish food).

I feel some of the answers were not actually the truest of answers. Dr. Katz also defined Intermittent fasting as a diet and it is not a diet but merely an eating schedule. You apply a diet to your style. He also goes against other Doctors I have watched on Youtube, like Dr Ken Berry and Eric Berg. This is very confusing and misleading in what are possible best steps forward. Are there camps in the medical world as well? Sooooooo confusing. I just want to be healthy!!!!!

You are factually incorrect about your statements regarding “organic” foods.

They all use pesticides, just not synthetic pesticides. Some arent as effective as conventional pesticides so more need to be used. Some are more harmful to the environment that conventional pesticides. Some are more harmful to humans than conventional pesticides.

Not all. But quite a lot of them are just as bad or are worse than ones made in a lab. Dont fall for the “naturalistic” fallacy. Look at the actual data behind what they do and dont use.

Some of what is being said here is just wrong. With that being said, I welcome anyone who encourages the average person to make intentional changes to their diet. Definitely commend this dude in that he seems to genuinely want to help others.

There is no way, after being on a keto diet for 4 months, that I have experienced anything detrimental to my mind or brain. In fact quite the opposite. My anxiety is non existent or very manageable in stressful situations. My clarity is infinitely better. My sleep is better. The brain can use up to 75% of its energy with ketones. I understand completely those who are skeptical of keto because compared to how the average person eats today it is extreme. That’s because our diet has changed SO much faster in the past 200 years than our bodies have evolved. It’s impossible almost to eat zero carbs anyway.

Dangerous information about blue zones, saturated fat, protein, keto diet, vegan diet, intermittent fasting. I’m sure he wants to help people be healthier but a lot the information he’s giving is not true

  116. Max Banach

    September 27, 2023 at 8:44 am

A little misleading. He portrays excess carbohydrates being only stored as glycogen, while excess protein as going solely to fat. However, if your glycogen stores are full of course those carbs are turned into fat just the same. Then, his later point on strength training is undermined as optimal muscle growth is achieved with higher dietary protein than is recommended for the average, un-trained individual. The “most Americans get x2 the protein they need” figure is for the average Joe, not someone who is training.

    1. Blue Zones are a misnomer, almost all of those places he mentioned (except Loma Linda CA I believe) have animal foods like dairy, fish, lamb, pork, etc as a large portion of their diets.
    2. Eating a lot of protein does is not a bad thing, unless you have kidney problems or certain genetic predispositions, The human body CANNOT store protein as fat, protein is not an energy macronutrient like carbs and fats, its a nutrient macronutrient, high protein intake means increased muscle mass and higher metabolism, its good
    3. Animal foods have a TON of nutrients – zinc, iron, B3, B6, B5, B12, copper, molybdenum – Plants do not have these in sufficient amounts, and, lots of plant foods have anti-nutrients that inhibit the absorption of nutrients.
    4. Organic foods probably don’t have necessarily more nutrients than non-organic, but you want to minimize your exposure to pesticides and herbicides as much as you can.
    5. Plant foods do contain protein, but plant-based proteins LACK complete amino acid profiles – he is plain wrong there
    6. He talks about making muscle with plants then lists off ANIMALS – horses, gorillas… We are humans, not animals, our metabolism and physiology are VASTLY different than that of Apes and farm animals
    7. Antioxidant consumption post workout is going to be incredibly negligible in terms of recovery and muscle growth – eat enough protein and carbs and get enough sleep, also grounding.

    🙂
