    It’s likely cliché but I absolutely loved his parts of Nailed It, still very curious how that ever came to be, but he was an amazing sport.

    I will die on this hill. Using math, anything at .5 or above we round up. If white chocolate is 50% cocoa then we ADD things, diluting it, it becomes less than 50% therefore we round DOWN.

    White chocolate is NOT chocolate.

    I found ‘Dubai chocolate’ at a discount store at a discount price, like $5 …should have known better. Instead of the shredded phyllo, the ingredients said ‘shredded wheat’😂 like the cereal? I don’t know…it wasn’t that great.😅

    I remember seeing this amazing guy on Food Network 20 years ago (yes, really). He’s looking all right.

    Caveat: You want to ask for context when you ask whether white chocolate is chocolate. In the US, the product has to contain some amount of cocoa solids in order for it to be legally called “chocolate”. Chef Jacques of course has the expertise to say that white chocolate that uses 100% cocoa butter is chocolate, but that can get some folks in trouble with the feds here.

    Also I don’t think he heated the chocolate to the boiling point of water (which will probably scorch the chocolate), so that temperature is Fahrenheit. I think it’s somewhere between 35 and 40C.

    A big reason you crave sweet after eating is that In NATURE, sweet would be associated with fruit. Sweeet fruits are typically full of enzymes and fibres that help with digestion.

    So what you are craving is a healthy digestive aiding fruit.

    But nowadays we can refine sugar and put it into foods/treats that totally lack fibre and enzymes

      @dmsmhic It’s basically a new flavour/texture combination. The pistachio cream and the light crunch of the kataifi go well with milk chocolate. It’s definitely overhyped, but if you like pistachio and chocolate, it’s worth a try.

    Regarding the refrigeration question, storing chocolate cold will not only not spoil it, it’ll actually preserve it much longer (provided it’s packaged properly and all). Chocolate will spoil (“dry out”) quicker with higher temperatures – on a scale where what many people consider a normal room temperature is already close to the upper end. So, if you take your sweet time for a bar (or want to keep some around for longer), seriously consider storing it in a cool place.

    Tangent: It’s not helping that most stores couldn’t give a fkuc about storing it at a proper temperature and may even keep it on a “presentation shelf” with lighting near by.

    Ahh 90% Dark Chocolate. Difficult to bite into. Simply place a piece on your tongue and allow your body heat to slowly melt in your mouth.

    I unfortunately found the first two answers pretty lacking and almost clicked off the video – he really didn’t have any insights on those two questions and maybe it would’ve been better to cut them. I’m glad there were timestamps on the video, though, so I stayed around because the other topics looked interesting

    Something really easy, delicious and “fancy” that you can make if you have some chocolate are truffles with butter ganache. Typical ganache uses cream, but I’ll assume most of us don’t just have cream in our refrigerator on a regular basis. Butter (real butter) can be used to make butter ganache. So if you have chocolate chips or bar chocolate in your pantry, as well as cocoa powder, and you’ve also got some butter, you can make butter ganache truffles. I don’t have a specific recipe to share because I don’t want to get in trouble for having a bad one. You just prepare the ganache, roll it into balls, and then coat the balls in cocoa powder. And good news: for ganache, you do _not_ need to worry about tempering, or preserving the temper of, the chocolate.

    They’re easy, luxurious, and delicious. In fact, I think they’re better than truffles made with cream. You can even experiment with filling them, maybe with a candied cherry or nuts, and you can try rolling them in other things like powdered sugar, freeze-dried raspberry powder, or crushed up cereal.

    The shop I worked in never let us melt chocolate over double boiler. They claimed it put too much moisture in the air around the chocolate. 😂

    Keenan Gherard once told me that the formation of Chrystal’s can actually generate enough heat to bring the chocolate out of temper. Seems far fetched but would explain those times when my Chocolate was tempering nicely and then boom went out of temper for seemingly no reason!

    15:15 – In the previous centuries milk used to be a more seasonal thing than it is today, and was accessible during the Spring and Summer months when animals nurse their young. That’s when it used to also be available to make chocolate.

    “I don’t always eat chocolate, but when I do, I can hear professor Lupin say, “Eat this, its chocolate. It helps, it really helps” in my head. Eating chocolate (dark non-dairy for me) helps while traveling or other long days.

    Dubai chocolate is terrible. The texture and taste as well as the price is terrible. The chocolate is tasteless, the pistachio filling is gritty and doesn’t even taste like pistachios. Altogether a unpleasant mouth feel . Definitely overhyped.
